Thank you so much for your kind words to part 1 of our personal story.  Here is the rest of the story and a very exciting announcement.

And then there were night terrors…

I don’t know exactly when all the sleep problems started.  It all runs together.  I know that my sweet Bella learned to sleep through the night like a normal baby.  In the beginning she slept right through the itching, then she scratched while she was sleeping, and then at some point she was no longer able to sleep through it.  She would wake up crying and scratching.  I’d give her a dose of the Atarax and rub her back until she fell asleep again.

Living without a Microwave

My brother recently called me a hippie.  I had to laugh, because I am not a hippie!  But when I say things like “We don’t have a microwave” I certainly see how it could look that way.  Click on over to Quick and Easy, Cheap and Healthy to read why we don’t have a microwave and how we survive without one.

Olive Garden’s Zuppa Toscana (dairy-free)

 

Spicy sausage, potatoes, greens and bacon in flavor-packed broth. This savory and satisfying soup is a fabulous way to sneak a little kale into your little one’s belly.

My sister in law’s mother has brought this soup to many family dinners.  It’s always my favorite.  After sipping a mug of Zuppa Toscana around a bonfire last fall (bliss!), I finally requested the recipe.

Once I made it myself, I realized how easy it is to make dairy-free.  It turns out, I actually prefer it dairy-free!  If you disagree, add a little coconut milk or cream just before serving.

Oatmeal Blender Waffles Recipe


I posted this recipe once before with a big old fat typo! It called for 2 tsp baking soda instead of baking powder.  A very sweet reader left me a note letting me know it tasted like baking soda.  Well, I guess so!  Please accept my apologies if you tried this recipe with all that baking soda. I can only imagine how disgusting it was!

The correct recipe is quite good!  I promise. I tested it this morning on a “normal” tween who eats the typical American diet.  She said the waffles were really good. Once I told her there were no eggs, milk or wheat in the waffles, she couldn’t believe it.

This recipe makes four waffles.   Make sure you blend only one batch at a time unless you have a high power mixer like a Bosch or vita-mix.  Even then, only double the batter will fit in one blender.

Homestyle Chicken Noodle Soup from Scratch

 

Is there anything more comforting than homemade chicken noodle soup?  It’s soup-er good for you and easy to make.  Since most of the ingredients are leftover, it feels a little like a free wholesome dinner.  Love it!
