Oven Baked Asparagus Fries

As you know, I am working to be more creative with our veggies.  So far I’ve made Bacon and Ranch Roasted Cauliflower and Caramelized Brussels Sprouts with Bacon Pieces.

Today I bring you Oven Baked Asparagus Fries.  These savory asparagus are crispy on the outside and tender on the inside.  They are kid–friendly.  You can pick them up with your fingers and dip them in ranch if you want.  Adults will find them tasty enough on their own.

Traveling with Food Allergies Food, Part Two

 

Last week I received an e-mail from a Real Food, Allergy Free reader asking for traveling help.  She is planning to take a road trip at the end of the month.  Her son has severe food allergies, so stopping at restaurants is not an option.  You can read her e-mail and part one of the series here.

Ground Beef and Potato Hash

I was feeling a little under the weather this weekend. When lunchtime sneaked up on me, I needed to fix something simple.  I found a package of ground beef in the fridge and sprouting potatoes in the pantry.  Ground beef hash it was.

Ground beef hash is a frugal, kid and allergy friendly meal can be thrown together quickly.  The secret to good hash is to season it liberally, otherwise it can be rather bland.

Some of the kids topped their ground beef hash with cheese and some of them topped it with ketchup.  Three out of four of them had two helpings.
