Skillet Meal: Pizza Rice

This recipe was inspired by a pound of “Italian Pizza Sausage” made by a local farmer.  I had no idea what I was going to do with it, but I was so excited to see locally and humanely raised pork that I couldn’t pass it up.  We have been addicted ever since.

We affectionately named this meal “Pizza Rice” after my non-allergic kids favorite carry out meal: sausage pizza.  Obviously, pizza is not allergy-friendly, so this is a great way to enjoy the flavor of sausage pizza without the allergens and additives.

Because I try to keep rice cooked in chicken stock in the freezer at all times, this meal comes together very quickly.   I cook a stock pot full of rice, let it cool, divide and toss in the freezer.  This way I am always ready for a quick stir-fry or Mexican dish.

“Pizza Rice” has been a great dish to take  to our church pot luck dinners.  It’s something everyone can enjoy as a side dish, and if there is nothing safe for Bella to eat, this will be satisfying and filling in itself.

  • 3 cups Rice, cooked

Directions:

  2. Stir in rice and cook until heated through.  Enjoy!

Allergy-Friendly Spiced Cake Donuts

“Mom, can you make some donuts that I can have?”  That is what my baby asked me.  My heart melted.  Thankfully, I remembered seeing this recipe on Cyble Pascal’s blog.  I ordered a couple of donut pans from Amazon and picked up some gluten-free flour mix.  This recipe is a bit fussy for my style but when your baby asks for donuts, you make donuts!

Allergy-Friendly Spiced Cake Donuts

Ingredients:

  • ¼ cup + 2 Tbs Coconut Milk
  • ½ tsp Lemon Juice
  • 1 cup Gluten-Free Flour Mix
  • ¼ tsp Xanthan Gum or Guar Gum
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 1/8th tsp Cinnamon
  • 1/8th tsp Nutmeg
  • ½ cup Sucanat or Brown Sugar
  • ¼ cup Palm Shortening
  • ½ tsp Vanilla Extract

Directions:

  1. Preheat oven to 350.
  2. Mix egg substitute and set aside.
  3. Combine coconut milk and lemon juice and set aside.
  4. Combine dry ingredients and whisk well.  Cyble suggests spooning the flour mixture into a measuring cup and levelling off so you don’t end up with too much flour.
  5. Combine remaining shortening, vanilla and egg substitute.  Beat 2 minutes or until light and fluffy.
  6. With the mixer on, sift in 1/3 of the flour mixture and then add 1/2 of the milk mixture.  Repeat.  Sift in the final 1/3 of the flour mixture and beat until smooth.  Do not over mix.
  7. Spoon mixture into donut pan filling donut holes 7/8 full.  Tap the pan against the counter a few times to settle batter into pan.
  8. Bake 15 minutes until lightly golden.  Let cool 5 minutes and transfer to cooling rack.
  9. Dip the donut in the glaze and let the glaze set.  Enjoy!

I {heart} Pinterest!

I LOVE Pinterest! Pinterest is an online pinboard for organizing ideas you see on the web. You can set up different boards for different needs. Planning a wedding? Set up a wedding board? Building or remodelling a home? Set up a home board.

I have a Recipes to Try, For the Home, For the Kids, Holidays, and Inspiration boards. I love that Pinterest is image driven. A quick glance will help me find what I need.

Some of the recipes "pinned" to my Easily Allergy Friendly to Try board

Here’s how it works: Once you set up a free account, a “Pin It” button installs in your browser. When you are cruising the web and see something you like, you click the “Pin It” button. It magically pins the image to the board of your choice. Then when you need to find the idea again you click on the image and it will take you to the original article.

A fun feature of Pinterest is that you can follow your friends boards and comment on them. Recently my BFF pinned some decorating ideas for her house. I was able to leave a comment about how I thought it would work in her home.

Did you notice the new “Follow Me on Pinterest” button in the sidebar? I currently have 164 recipes pinned on my Easily Allergy-Friendly Recipes to Try Board and I add more all the time. I’d love to share these ideas with you. Just click on “Follow Me on Pinterest” to follow my pinboards.

Allergy Bites!

I find so many interesting studies and articles in the news about food and food allergies.  Or maybe they’re not that interesting and I am just a nerd!  If you are a nerd too, I’m starting this series for you!  I’m calling it Allergy Bites.

  • Kids Reacting Badly: “Today one in three Australians suffer from an allergic disease, and what’s alarming about that is that it was virtually unheard of 30 years ago. Among children, the incidence of food allergies has increased five-fold in just the past decade.”

  • Whole Foods and Major Cereal Brands Accused of Deceptively Marketing GMOs as ‘Natural’: “Cereal samples collected by The Cornucopia Institute were allegedly tested by an ‘independent, accredited laboratory’, according to a statement from the organization, and found to contain ‘high levels of genetically engineered ingredients.’ The group says some of the cereal samples contained anywhere from 25 to 100 percent genetically modified ingredients despite making non-GMO claims either on product packaging or company websites.”
